Denis Paillot, having qualified as a butcher, acquired sound training in delicatessen working with André Deport in Ancy le Franc before setting up shop in Noyers-sur-Serein in 1981. Taking over from René Porte, who had the prestigious title of “Meilleur Ouvrier de France”, was quite a challenge and Denis Paillot invested all his creativeness into transforming quality basic products into refined compositions. The constant quality of the Butcher’s and deli Shop products led to the creation of « La Maison Paillot » in 2006. As an amateur of wine, good food and art, Denis Paillot keeps a careful eye on his supplies, and most of all, looks after his customers.
Sweet delicatessen appeared about ten years ago satisfying the customers’ desires to treat themselves with a homemade finish to their meal. Their style, texture and fondant vary with the seasons. We can add a personal touch to our deserts so you can end your special occasions with style.
Bread, which is the key element of a meal, must be perfect. We bake it daily to get the perfect balance between moist and crisp.
We make our special breads with white flour, rye meal, sunflower seeds, flax seeds and sesame seeds.
We have designed a brand of home-made specialities in glass jars for easy transport and preservation. The classics which have made our reputation, ready to take away.

Dishes inspired by our local recipes are prepared daily in tune with the season and your own wishes. There are plenty of occasions to get together all year round and we will help you organise brunches, family dinners and receptions.
As a partner of the Chablis area wine festivals, we have acquired solid experience in large scale event management. Catering for large groups outside our restaurant is a showcase of our know-how. We can serve up to 800 meals for “Grands jours de Bourgogne” (Burgundy wine event), and up to 200 for weddings, christenings, and other events.
